1 x cucumber
450g Soya Yogurt
1 x bunch of fresh mint according to taste chopped
1 x clove of garlic finely chopped or grated. (omit if garlic free)
Sea salt & pepper to taste
- Grate the cucumber skin on or off according to your preference.
- Place the cucumber in a sieve over a bowl and sprinkle over a little sea salt, leave for 10 minutes.
- Press out the liquid & combine with all the other ingredients.
- Season and leave to infuse for 20 minutes or so before serving.
