Ingredients
200g ground almonds
50g free from oats
100g desiccated coconut
150g xylitol
150g butter or dairy free margarine
1 tsp vanilla bean paste
1/2 teaspoon bicarbonate of soda
1/2 teaspoon sea salt
Oven pre-heated too 170c
Lined Baking Sheet
Cling Film
Method
Blend the ground almonds, oats, desicated coconut and bicarbonate of soda together.
Add the butter or free from option, vanilla bean paste, xylitol and blend them together with the
ingredients above.
Place a large strip of cling film on the work surface, place and flatten the mixture onto it, place another large strip over that, and roll out flat to 1/2 a centimetre thick.
Gently remove the top sheet of cling film. Cut out circles with a pastry cutter, your choice of size, place onto the baking tray.
Bake for around 8 - 10 minutes or until golden.
Remove from the oven and gently transfer onto a wire cooling rack.
