2 large oranges
200g castor sugar
200g ground almonds
½ teaspoon baking powder
6 whole eggs
1 lemon juice & zest finely grated
1 x greased and lined cake tin 20cm/8in

Cooking time over 2 hours
Weigh out the ingredients.
Place the whole oranges in a sauce pan and cover with cold water. Bring to the boil and simmer for up to two hours. Check the water to ensure the oranges to not boil dry. After two hours remove from the heat and leave to cool.
Preheat the oven to 180c.
Remove oranges from the water. Cut in half and remove all the pips.
Place the oranges in food processor, and blitz to a pulp.
Add all the other ingredients and blend until mixed.
Pour the mixture into a greased and lined cake tin 8in/20cm.
Bake for 45 minutes or until skewer comes clean.
Let the cake cool on a cooling tray and serve with cream, fresh fruits, or dairy free yoghurt.
